一、北京小吃
1、涮羊肉

过桥米线由三部分混编:一是汤,二是把每一种肉质细嫩,三是米粉和蔬菜。制汤制作考究,最好选择武定强的母鸡,本地老母鸡和猪筒子骨煨制辊,使汤主要注意是选料讲究,原料与水不是很严按比例投放,中途不准再加水,要用微火烧开,撇去浮沫,除用小火煨制的变化。
经用精盐、味精、胡椒粉调味后,装在碗里融入热鸡油的汤,油浮在汤的表面起隔温作用。吃时用大碗,先盛有熟鸡油、味精、胡椒面,接着将鸡、鸭、排骨、猪筒子骨等。这味道最重要的鲜美可口,营养丰富。
3、烧饵块
